Spelt bread
The unique nutritional quality and baking quality has made for a huge comeback of spelt and today many people prefer spelt to wheat. Spelt is protected from the elements by a hull which is firmly attached to the grain.
Sourdough bread
Sourdough bread has a mildly sour taste not present in most breads made with baker`s yest and better inherent keeping qualities than other breads, due to the lactic acid produced.
Soda bread
Soda bread is a variety of quick bread traditionally made in a variety of cuisines in which sodium bicarbonate is used as a leavening agent instead of the more common yeast.
Brioche
It is a pastry of french origin that is similar to a highly enriched bread and whose high egg and butter content give it a rich and tender crumb.

Today's consumers want products made with natural ingredients that combine a clean label and good flavor. With our freshness solutions for baked goods. Heart and Soul Bakery wants to meet consumer needs. No added preservatives will be found in any of the things we bake. Caring for your bread
In a perfect world bread would be enjoyed the same day it is baked, but since that can't always be the case. We recommend storing leftovers in a paper bag, at room temperature. The crust will stay firm and the inside soft. However, as the days go on, you can be creative with what's left: toast, croutons, bread crumbs, etc...be inventive!

Freezing your bread
Heart and Soul Bakery`s bread freezes well when wrapped tightly. Slicing is optional but allows you to pull out only the quantity you need. Wrap your loaf using two clear plastic bags. Then, seal it using masking tape and place it in the freezer. Refreshing, or defrosting the loaf, let stand it at room temperature for three to four hours.

How long does it stay
so delicious?
In general, since our breads are made with natural ingredients, they stay fresh much longer than standard, speed-process factory loaves. For bread that you will eat same day or next, just leave the loaf on the cutting board at room temperature. It will keep fresh for several days. Storing bread in the refrigerator is a "No No" as the average temperature of the fridge is the temperature at which bread goes stale the most quickly - I have definitely been guilty of this in the past but if you are only using for toast, this is not a problem. For long term storage, the freezer is the ideal place and bread will keep for up to 3 months. The bread can be defrosted at room temperature for a few hours to bring it back to its fresh state.
